Low Fat Pumpkin Bread


2 cups flour
2 cups sugar
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. cloves
1 tsp. nutmeg
1/2 tsp. ginger
1/2 tsp. salt
1/2 cup oil
1/2 cup applesauce
4 beaten eggs (or equivalent egg substitute)
2 cups pumpkin puree
Preheat oven to 350.  Grease and flour tube or loaf pans. Sift together dry ingredients and make well in center.  Pour in oil, applesauce and eggs.  Beat on low, add pumpkin, and continue to beat on low.  Pour in pan(s).

Bake 1 hour or until top springs back when pressed or toothpick comes out clean.  Cool 15 minutes and invert on rack.  Cool completely.




You may add cream cheese frosting, but it really does not need it.
